Beefy Biscuits

Beefy Biscuits

For the biscuits

1/2 cup beef broth
1/2 cup dry milk powder
6 tablespoons olive oil
2.5 ounce jar beef flavored baby food
2 teaspoons honey
2 teaspoons minced garlic
1 teaspoon parsley
1 large egg
1 1/2 cups whole wheat flour, plus additional for mixing and kneading
1/2 cup cracked wheat
1/2 cup rice flour
1/2 cup rye flour

For the glaze

1 large egg
2 tablespoons beef broth

To make the biscuits

Preheat oven to 325

In a large bowl, whisk together broth, milk powder, oil, baby food, honey, garlic, parsley and egg until combined.

In a medium bowl, whisk together whole wheat flour, cracked wheat, rice flour and rye flour.

Using a wooden spoon, gradually stir the flour mixture into the wet ingredients, adding additional whole wheat flour until the dough is quite stiff. Scoop dough onto a floured surface and knead until it is smooth - adding enough whole wheat flour to keep it from sticking to your hands. Shape into a ball, cover the dough and let rest for 10 minutes.

Roll the dough out until it is about 1/2" thick. Cut out as many biscuits as you can - gather up the scraps, roll out again and cut additional biscuits. Place them fairly close together on a couple baking sheets.

Place in the oven and bake for 30 minutes. While baking, make the glaze.

To make the glaze

Mix together egg and broth until frothy.

After 30 minutes, remove from the oven and brush both sides of the biscuits with the glaze. Place back in the oven and continue to bake for an additional 30 minutes. Remove and let cool completely.

Yield will depend on the size of your cutters - we got about 3 or 4 dozen.
