Chewy Chocolate Chip Cookies

Chewy Chocolate Chip Cookies (Adapted from KAF Cookie Companion)

2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
8 tablespoons unsalted butter, softened
4 tablespoons trans-fat free shortening (I often use spectrum organic shortening)
2/3 cup dark brown sugar
2/3 cup granulated sugar
2 tablespoons light corn syrup
1 tablespoon cider vinegar
2 large eggs
1 tablespoon vanilla
2 to 3 cups bittersweet chocolate chips or chocolate and peanut butter swirled chips (I used about 2 cups)

Preheat oven to 375

In a medium bowl, whisk together flour, baking powder, salt and baking soda.

In a large mixing bowl, cream together butter, shortening and sugars until light and fluffy. Beat in corn syrup and vinegar. Add the eggs, one at a time, beating until combined. Mix in vanilla.

Add the flour mixture and chips - stir just until combined.

Using a tablespoon cookie scoop, drop the dough onto parchment lined baking sheets. Bake until just golden around the edges and the centers still look slightly underdone, about 10 minutes. Remove and let cool on the baking sheet for about 5 minutes. Place the cookies on a wire rack to finish cooling.

Makes about 48 cookies.

  1. I have attempted that recipe twice and each time I have ended up with extremely flat, almost lace-like cookies. I had to throw both batches away. Wonder what it is I'm doing wrong. It's the only KA cookie recipe with which I've ever had a problem.

  2. Jen - that is one of the reasons I added the shortening. Have you tried refrigerating the dough to help with spreading?

  3. Do people actually throw stuff like that away? I read SO OFTEN that something was the wrong consistency or something and that they THREW IT OUT. WHAT? Wasn't the batter good for snacking on from the fridge or couldn't you bake it up in cupcake cups? Sorry. I'm mostly just wondering if people just write that meaning "it didn't work out" or if they actually put entire batches of chocolate chip filled dough into the trash.

    Okay, I'm done with that (sorry). I'm going through your recipes and I'm really excited to make some of them! They look great. I'm the type of person who always comes back to tell what I thought of things I make, so you'll be hearing more from me, I'm sure (that's not meant as a threat).
