Macerated Winter Fruit

Macerated Winter Fruit (Adapted from CL)

1 cup diced fresh pineapple
1/2 cup apple cider
1 tablespoon honey
1 cinnamon stick
2 cups diced sweet crisp apples (I used Fuji)
1 cup pink grapefruit sections
1 cup seedless red grapes, halved
1/2 cup dried cranberries
1 tablespoon Grand Marnier
1 tablespoon fresh lemon juice

In a small saucepan, add pineapple, apple cider, honey and cinnamon stick - place over medium heat and cook until honey dissolves, about 2 minutes. Pour into a large bowl. Add apples, grapefruit, grapes, cranberries, Grand Marnier and lemon juice - toss gently to combine. Cover and chill in the refrigerate for at least 1 hour before serving.

Makes about 4 to 6 servings.
