Caramel Apple Muffins

Caramel Apple Muffins(Adapted from The Flax Cookbook)

1/4 cup canola oil
1/2 cup sour cream
1/2 cup granulated sugar
1/4 cup caramel topping
1 large egg
1 egg white
1/2 cup all-purpose white flour
1/4 cup whole wheat flour
1/3 cup rolled oats
6 tablespoons ground flaxseed
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 cups finely chopped apples

Preheat oven to 350

In a large mixing bowl, beat oil, sour cream, sugar, and caramel topping until well blended. Mix in egg and egg white until the mixture thickens slightly.

Place flours, oats, flaxseed, cinnamon, baking soda, nutmeg, and salt in a food processor. Pulse eight times until mixture is blended and oats have been chopped into smaller bits.

Add dry mixture to wet and stir just until blended. Gently fold in apples into batter.

Evenly distribute the batter into 12 muffin cups that have been coated with cooking spray. Bake for about 13-15 minutes, until the muffin springs back when gently pressed in the center.
