Cumin Roasted Potatoes

Cumin Roasted Potatoes

2 large russet potatoes
1 tablespoon olive oil
1 teaspoon cumin
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon cayenne

Preheat oven to 500

Clean potatoes, cut into 1/2" slices and place in a medium bowl.

In a small bowl, mix together olive oil, cumin, garlic, salt and cayenne. Spoon over potatoes and toss well to coat.

Place on a baking sheet coated with cooking spray and bake for 20 minutes or until done.

  3. I just tried these. Used red potatoes and cut in wedges. OMG, were so AWESOME!!! Thanks for the idea and recipe.
