Hazelnut Chocolate Chip Bars

Hazelnut Chocolate Chip Bars (Adapted from Canadian Living)

8 tablespoons butter, softened
8 tablespoons spectrum organic shortening
1 cup granulated sugar
1/2 cup packed brown sugar
2 eggs
2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups Avellanas or hazelnuts, toasted and coarsely chopped
1 cup bittersweet chocolate chips
1 cup semisweet chocolate chips

Preheat oven to 375

In a large mixing bowl, mix butter and shortening until smooth. Add in sugars and cream together until light and fluffy. Beat in eggs 1 at a time, mixing until combined. Add in the vanilla.

In a medium bowl, whisk together flour, baking soda and salt. Mix into creamed mixture just until combined. Fold in nuts and chocolate chips. Cover dough and refrigerate for 15 minutes.

Place dough into a 15 x 10" baking dish coating with cooking spray. Using an off-set spatula, spread the dough evenly. Bake for 18-20 minutes, until golden brown, but still slightly underbaked in center.

Place on a wire rack and let cool for a few minutes. Cut into bars while still warm and let cool completely before removing from pan.
