Mozzarella, Ham, and Basil Panini

Mozzarella, Ham, and Basil Panini (Adapted from CL)

1 large ciabatta loaf
1 tablespoon plus 2 teaspoons Dijon mustard
1 tablespoon plus 2 teaspoons balsamic vinegar
8 ounces thinly sliced fresh mozzarella cheese
12 basil leaves
8 ounces thinly sliced deli ham
2 sweetened hot cherry peppers, sliced
1 plum tomato, thinly sliced

Carefully cut the ciabatta loaf in half horizontally. Place mustard on bottom half and use a pastry brush to evenly coat the bread. Drizzle top half with balsamic or brush it on with a pastry brush. Layer the bottom half evenly with mozzarella, basil, ham, peppers, and finally the tomato. Place the top half of the bread on.

Preheat your panini press and place the large sandwich on. Cook until the insides are warm and the crust is crisp and golden. Alternatively, place sandwich in a large hot skillet and top with another heavy pan to press down. Flip over halfway through if needed.
