Raisin Spice Bars

Raisin Spice Bars (Adapted from The Art of Making Good Cookies, Plain and Fancy)

2 cups all-purpose flour
1 teaspoon ground ginger
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons butter, softened
1/2 cup sugar
1 egg
1/2 cup molasses
1/2 cup milk
1 cup golden raisins

Preheat oven to 350

In a medium bowl, sift together flour, ginger, cinnamon, allspice, baking powder, baking soda and salt.

In a large mixing bowl, cream together butter and sugar. Beat in egg and molasses until combined.

Add flour mixture alternately with milk, starting and ending with the flour. Gently fold in raisins. Scrape mixture into a 9 x 13" baking pan coated with cooking spray.

Bake for 20 to 30 minutes, or until the top lightly springs back and the edges have just started to come away from the sides. Place on a wire rack to cool completely.

    I love all your receipes. Can you pleae tell me how long the granola bars last since I woud like to mail them to a college kid.

  5. Joan - Wrapped well, they would probably be fine for a few days. You may wish to freeze them first or have them freeze when they get them to keep them fresher longer.
