Strawberry Cream

Strawberry Cream (Adapted from Eating Well)

3 tablespoons cold water
1 envelope unflavored gelatin
4 cups hulled strawberries
1/2 cup vanilla sugar
1 teaspoon vanilla extract
3/4 cup sour cream

To top the cream

1 cup hulled strawberries, cut into 1/4-inch dice
2 teaspoons sugar

In a small bowl, mix together water and gelatin. Heat in the microwave until the gelatin has completely dissolved, but is not boiling - should be about 15-30 seconds. Stir until smooth.

In a food processor, add strawberries, sugar and vanilla. Puree until smooth. Add sour cream and pulse to combine. While running, slowly drizzle in the dissolved gelatin. Pour into glasses and cover. Refrigerate at least 3 hours to set up.

To top the cream

In a small bowl, gently toss together the diced strawberries and sugar. Let stand for a minutes until the berries become juicy. Evenly divide between the glasses.

  1. This looks so goooooood! Exactly what I like to eat for breakfast. I know it was probably intended for dessert but this would be a great snack or breakfast item. In any case, thank you because it seems to be easily adaptable to other fruits and I am always haappy to have a good base on hand.
