Thai Beef Rolls

Thai Beef Rolls(Adapted from CL)

1 1/2 tablespoons fresh lime juice
1 tablespoon dark sesame oil
1 tablespoon fresh grated ginger
3 garlic cloves, minced
2 teaspoons fish sauce
3/4 teaspoon sugar
4 - 8" tortillas
2 cups torn Boston lettuce
12 ounces thinly sliced deli roast beef
1/2 cup matchstick-cut carrots
1/4 cup chopped fresh mint

In a small bowl, whisk together, lime juice, oil, grated ginger, garlic, fish sauce and sugar.

Set tortillas on a cutting board and brush lightly with 2 teaspoons juice mixture on each tortilla. Arrange 1/2 cup lettuce on each tortilla and then top each with about 3 ounces beef. Arrange carrots and mint over each serving. Drizzle each with about 1 tablespoon of remaining juice mixture - roll up and cut with a serrated knife.

  2. We have brought this up before and I'm still not decided - it seems like a lot of work to change the name. I'm not sure it would make sense to be "in the desert" while we live in MD. I like your suggestion though!
