Toni's Banana Chocolate Chip Walnut Bread

Toni's Banana Chocolate Chip Walnut Bread (Adapted from CL)

1 cup mashed ripe bananas
1/2 cup vanilla yogurt (fat free or low fat is okay)
1/4 cup soy milk
2 tablespoons canola oil
1/4 teaspoon vanilla extract
2 cups whole wheat pastry flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup mini semisweet chocolate chips
1/4 cup chopped walnuts, toasted

Preheat oven to 350

Process bananas, yogurt, soy milk, oil and vanilla in a food processor until smooth.

In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon and salt. Reserve about a tablespoon of this mixture.

In a small bowl, mix chocolate chips and walnuts with the reserved flour until well coated.

Add the banana mixture into the flour mixture and stir just until moist. Fold in the mini chip and walnut mixture. Scoop dough into a 9 x 5" loaf pans coated with cooking spray.

Bake for about 45-50 minutes, turning halfway through, or until a toothpick pick inserted in center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove and cool completely.
