Whole-Wheat Couscous with Parmesan and Peas

Whole-Wheat Couscous with Parmesan and Peas (Adapted from Eating Well)

14 ounces vegetable broth
1/4 cup water
2 teaspoons olive oil
1 cup whole-wheat couscous
1 1/2 cups frozen peas
2 tablespoons chopped fresh dill
1 teaspoon freshly grated lemon zest
salt and fresh ground pepper to taste
1/2 cup freshly grated Parmesan cheese

In a large sauce pan, add broth, water and oil. Bring to a boil and stir in couscous. Remove from heat and cover - let stand 5 minutes.

Cook peas according to package directions. Add the peas, dill, lemon zest, salt and pepper to the couscous. Gently mix together with a fork. Sprinkle with cheese.
