Polenta Lasagna

Polenta Lasagna(Adapted from CL)

3 cups marinara sauce, divided
1 teaspoon olive oil
1 cup finely chopped onion
1/2 cup chopped red bell pepper
1 cup meatless sausage, crumbled
1/2 cup chopped zucchini
2 garlic cloves, minced
16-ounce tube of prepared polenta, cut into 18 rounds
2 ounces shredded mozzarella cheese

Preheat oven to 350

Lightly coat an 8" square baking dish with cooking spray and place 1/2 cup sauce over the bottom.

Heat oil in a large skillet over medium-high heat and sauté onion and bell pepper about 4 minutes or until tender. Stir in sausage and cook 2 minutes. Add zucchini and garlic; sauté 2 minutes, stirring frequently. Add remaining marinara sauce and reduce heat,simmer 10 minutes.

Arrange 9 polenta slices over marinara in baking dish, and top evenly with half of sausage mixture. Sprinkle 1/4 cup of cheese over the top. Arrange remaining polenta over cheese. Top with the remaining sausage mixture, and sprinkle with remaining 1/4 cup cheese.

Cover with foil and bake for 30 minutes. Uncover and bake an additional 15 minutes or until bubbly. Let stand 5 minutes before serving.
