Yes... again....

What can I say.... it's another meatloaf!

Unlike some other ones we have done recently, there are no surprises inside or funky combinations. Barbecue Meat Loaf is simply mixed in a single bowl and then then shaped free-form style on a broiler pan. The original recipe has you put only 1 tablespoon of the barbeque sauce in the mix, but we upped it to about 3 because the beef was pretty lean and we didn't want it to be too dry. There was still plenty left over to spread over the top so you could even add a little more to the mix. The sugars in the sauce darkened the top and lent a subtle caramelized sweetness. The loaf held its shape and didn't fall apart when we were slicing. It was still a tad on the dry side, but we really liked the smoky flavor from the sauce. We also used a hotter chili powder which gave it a nice kick. The slice is just the right size for a sandwich too... guess what lunch will be?

  1. Cool. it's quite warm here... and the forecasts for the days to come are good... many guests are coming...a nice idea for lunch tomorrow ... thanks... ;) ;)

  2. I'll have to give your recipe a try. I made one last weekend but wasn't happy with the results.

  3. Mmmm, I love meatloaf and this one sounds delicious.

  4. I love meat loaf but with a bit of more spice. However, from the decsctirtion taht I can see here- it sounds to be delicious. What kind of chili powder did you use?
